When life gives you apples…

Green apples were on sale this week, so of course I made an Apple Crumb pie! This is my favorite recipe. And it’s simple! Add 1/3 c dried cranberries and you’re good to go. Slice some cheddar cheese (Red Leicester irish cheddar here) and scoop some ice cream and you’re in heaven, I swear! Makes a perfect midnight snack.

In honor of Lincoln’s birthday and President’s Day, and my love of historical trivia, here is a sweet article about the moments Mr. Lincoln spent in the kitchen. Perhaps he, too, was slightly obsessed with creating good food?

With a name like this, it must taste heavenly.

Imagine eating cream puffs or eclairs for breakfast. But with a fraction (ok, let’s say 1% less) of the calories or guilt. Whip these babies up (added benefit: you will get an upper-arm muscle workout!), fill them with your favorite (un)healthy staples, take a bite, and feel yourself melt from the goodness. Some of my favorite toppings include: banana, berries, whipping cream, peanut butter, chocolate chips, honey, powdered sugar, chocolate syrup, and cinnamon. What would you recommend for sweet or savory toppings?

Exactly how these light, tender morsels got their name is one of the greatest mysteries of our time. But I am glad they no longer use their original name!

Nun’s Puffs
(from Better Homes and Gardens 75th Anniversary Cookbook)
1/2 c. butter
1 c. milk
3/4c. all-purpose flour
4 eggs
1 Tbsp. sugar (or more by preference)
Any combination of your favorite toppings. Some of my favorites include: banana, berries, whipping cream, peanut butter, chocolate chips, honey, powdered sugar, chocolate syrup, cinnamon

Generously grease a 12-cup muffin pan; set aside. In a medium saucepan melt butter; add milk. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball that does not separate. Remove from heat; cool for 5 minutes.

Add the eggs, one at a time, beating for 1 minute with a wooden spoon after each addition or until smooth. Divide dough evenly among prepared muffin cups, filling cups about two-thirds full; sprinkle with sugar.

Bake in a 375 degree oven about 30 minutes or until golden brown and puffy. Remove from pan. Serve immediately with your favorite toppings.

From My Top 10 List: Better than Thai carryout

Awesome. Easy. Delicious. Perfect main dish for a summer evening. Better than costly carryout. Are you drooling yet?

Thai Chicken and Nectarine Salad is the name of this winner. From Better Homes & Gardens.

If you’re not a fan of Thai level of spicy-ness, reduce the amount of crushed red pepper. Half would be good.

If You Can’t Take the Heat, Get Out of The Kitchen: Appetizer Edition

Simple. Fast. Delicious. Healthy (mostly). No heat required.

Slice cucumbers and sprinkle with cajun seasoning and a little sea salt. Serve with your favorite hummus. And an ice cold, simple beer. Like Dale’s Pale Ale. Yum.

Who needs flowers when you can have food?

Next time you want to send something special to that special someone, consider food, not foliage. (Hint to my loved ones.) How about a dozen chocolate-covered strawberries from Shari’s Berries? Heavenly! Or a dozen bags of specialty-flavor popcorn, packed in a cool wooden crate, from Dale & Thomas? Addicting! Or a couple dozen of the famed Neimen Marcus chocolate chip cookies? Yummm. Or something from a local bakery? Awesome. Or (and?) dinner at a favorite local restaurant. Fabulous. Or… something from your own kitchen, made with love? Best ever.

While my patio garden contains foliage, by default, the focus is food, not flowers. Except those that turn into food. 🙂 Oh, did I mention that I’m just not good at keeping up nice perennial or annual flowers? Must be a sign. Oops, back to the garden….Tomatoes, green bell peppers, banana peppers, blackberries, cilantro, parsley, basil, and rosemary.

Too good not to be true. Coffee-Marshmallow Crispies with Chocolate, Cherries & Almonds

Some things are just too good, too exciting, or too intriguing to keep quiet. Like food. Like the Olympics. Like the latest politician scandals.

No politics or Olympics here. Just mouth-watering, sensory-overload talk about some awesome recipes that I find, try, and love. They can be simple or complex, cheap or expensive, and from a leading chef or back of a package. The sky’s the limit, and I hope you, too, give these a try.
